Easy No-Bake Icebox Cake (The Perfect Summer Dessert)
Light, creamy, and endlessly customizable, this make-ahead dessert comes together without turning on the oven
With the arrival of warmer summer temperatures, I found myself wanting a cool and refreshing dessert, something that didn’t require baking, mostly because I didn’t want to heat up the kitchen. From somewhere in the deep recesses of my memory, I remembered the idea of an icebox cake.
The name comes from the old-fashioned term for a refrigerator, an icebox, and the fact that once assembled, the cake rests there while everything softens and comes together.
I shared the recipe with Sasha, our oldest daughter, and she was immediately delighted. Between the two of us, we lost count of how many variations we made over a couple of weeks. Thankfully, we had plenty of friends and neighbors to help us taste-test along the way. Sasha also came up with a wonderful idea, if you don’t want to make a full cake, you can create individual servings in half-pint jelly jars.
One of the things we both loved most about this recipe is how flexible it is. Some of our favorite combinations included:
graham crackers with blueberries, raspberries, and strawberries
chocolate chip cookies with strawberries
ginger cookies with mango
oatmeal raisin cookies with skinned peaches
vanilla wafers with bananas
Each version had its own personality, and every single one disappeared quickly.
This recipe is light, simple, and meant to be played with. Choose what you have, try something new, and enjoy the process. I have a feeling this will become a favorite in your home too.

Hi Donna, You can use plain yogurt. I did try vanilla because it gave it a little extra flavor, but chose to mostly stay with plain yogurt and extra vanilla to avoid the added sugar in the vanilla yogurt. You could use a flavored yogurt if you wanted but I haven't tried anything other than vanilla and it will come with added sugar.
This looks like an easy I’ve to make. A must make for the warmer months!
